š½ļø Letās talk meals!
Last week was chaosāmeetings, interviews, hockey awards, soccer prepāyou name it. So I barely had time to eat. Anyone else have those weeks?
Thatās why I always try to keep grab-and-go meals in the fridge. Hereās a few of my go-to emergency fridge staples:
⢠Rotisserie chicken š ā throw it in wraps, buns, or just eat plain
⢠Hard-boiled eggs š„ ā so versatile: deviled, sliced, or plain
⢠Greek yogurt + cottage cheese ā protein-packed lifesavers
⢠Raw veggies + hummus or dip š„
⢠Energy balls or homemade bars for snacks
⢠Cold pasta salad with cheese, tomatoes, cucumber & dressing
⢠Sandwiches ā still a winner when youāre running out the door
š My meal plan this week:
Iām eating from the fridge and freezer becauseāletās be realābudgeting is real, and I went a bit over last week stocking up on chicken (worth it though!).
⢠Monday/Tuesday: Baked ham with honey mustard glaze + baby potatoes & broccoli
⢠Wednesday: Grilled chicken seasoned with Oh Canada blend (I love that maple touch!)
⢠Thursday: Taking my mom out for supper for her 80th birthday š
⢠Friday: Something quickāmaybe leftovers or a pizza night
⢠Sunday night: Chinese food for my sonās birthday + an ice cream sundae baršØ (his requestāno cake!)

Anyone else love tofu? Itās affordable, healthy, and surprisingly filling. Iām planning some tofu bowls this week using one of my new seasoningsāorange honey rosemary. Sounds divine, doesnāt it?
š„¢ Thinking about making spring rolls tooā¦
I picked up the wraps and plan to fill them with:
⢠Peppers
⢠Carrots
⢠Cucumber
⢠Purple cabbage (for that pop of color)
⢠Boston lettuce
⢠Maybe even some mango! š„
If youāve made them before, give me your best tips! Someone told me to use a spray bottle instead of soaking the wrappers, and Iām going to try that.
