🍽️ Let’s talk meals!
Last week was chaos—meetings, interviews, hockey awards, soccer prep—you name it. So I barely had time to eat. Anyone else have those weeks?
That’s why I always try to keep grab-and-go meals in the fridge. Here’s a few of my go-to emergency fridge staples:
• Rotisserie chicken 🐔 – throw it in wraps, buns, or just eat plain
• Hard-boiled eggs 🥚 – so versatile: deviled, sliced, or plain
• Greek yogurt + cottage cheese – protein-packed lifesavers
• Raw veggies + hummus or dip 🥕
• Energy balls or homemade bars for snacks
• Cold pasta salad with cheese, tomatoes, cucumber & dressing
• Sandwiches – still a winner when you’re running out the door
🍗 My meal plan this week:
I’m eating from the fridge and freezer because—let’s be real—budgeting is real, and I went a bit over last week stocking up on chicken (worth it though!).
• Monday/Tuesday: Baked ham with honey mustard glaze + baby potatoes & broccoli
• Wednesday: Grilled chicken seasoned with Oh Canada blend (I love that maple touch!)
• Thursday: Taking my mom out for supper for her 80th birthday 🎂
• Friday: Something quick—maybe leftovers or a pizza night
• Sunday night: Chinese food for my son’s birthday + an ice cream sundae bar🍨 (his request—no cake!)
👩🍳 Let’s talk tofu!
Anyone else love tofu? It’s affordable, healthy, and surprisingly filling. I’m planning some tofu bowls this week using one of my new seasonings—orange honey rosemary. Sounds divine, doesn’t it?
🥢 Thinking about making spring rolls too…
I picked up the wraps and plan to fill them with:
• Peppers
• Carrots
• Cucumber
• Purple cabbage (for that pop of color)
• Boston lettuce
• Maybe even some mango! 🥭
If you’ve made them before, give me your best tips! Someone told me to use a spray bottle instead of soaking the wrappers, and I’m going to try that.
